Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 0.5 cup orange juice
  • 0.5 cup milk
  • 1 large egg
  • 0.25 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest (optional)
Add-ins and Toppings
  • 1.5 cups fresh or frozen cranberries
  • 0.5 cup chopped walnuts or pecans (optional)
  • 1 cup powdered sugar (for glaze)
  • 2-3 tablespoons orange juice (for glaze)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.
  3. In another bowl, whisk together the orange juice, milk, egg, oil (or melted butter), and vanilla extract. Add the orange zest if including.
Mixing and Baking
  1. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing.
  2. Fold in the cranberries and nuts gently yet thoroughly.
  3. Pour the batter into the prepared loaf pan, smoothing the top. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Cooling and Glazing
  1. Remove the loaf from the oven and let it cool in the pan for 10-15 minutes. Transfer it to a wire rack to cool completely.
  2. While the loaf cools, whisk together the powdered sugar and orange juice to make a smooth glaze.
  3. Drizzle the glaze over the cooled loaf, slice, and enjoy!
