Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.
- In another bowl, whisk together the orange juice, milk, egg, oil (or melted butter), and vanilla extract. Add the orange zest if including.
Mixing and Baking
- Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing.
- Fold in the cranberries and nuts gently yet thoroughly.
- Pour the batter into the prepared loaf pan, smoothing the top. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Cooling and Glazing
- Remove the loaf from the oven and let it cool in the pan for 10-15 minutes. Transfer it to a wire rack to cool completely.
- While the loaf cools, whisk together the powdered sugar and orange juice to make a smooth glaze.
- Drizzle the glaze over the cooled loaf, slice, and enjoy!
