Preparation
- In a large bowl, add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Combine thoroughly until well mixed.
- Scoop out portions of the yogurt mixture (about 2 tbsp each) and place them on a parchment paper-lined baking sheet or large plate. You should be able to make about 10 clusters.
- Place the baking sheet with the yogurt clusters in the freezer and freeze until they are completely solid, which usually takes about 1-2 hours.
Coating
- Once the clusters are frozen, melt the chocolate. In a microwave-safe bowl, combine the chocolate chips and coconut oil, microwaving in 15 or 30-second intervals and stirring in between until melted.
- Remove the frozen yogurt clusters from the freezer. Carefully dip each cluster into the melted chocolate, using a spoon to ensure that each one is thoroughly coated.
- Place each chocolate-coated cluster back on the prepared baking sheet. Optionally, sprinkle with a bit of sea salt for an extra flavor kick.
- Return the clusters to the freezer for a few minutes to let the chocolate harden and the yogurt solidify a little.

Notes
Store any leftover clusters in an airtight container in the freezer for up to a month. Keep them separated with parchment paper to prevent sticking. Feel free to experiment with other fruits and toppings.
