Ingredients

For the Yogurt Mixture
  • 1.5 cups chopped strawberries Fresh or thawed frozen strawberries can be used.
  • 1 cup plain Greek yogurt Use thick yogurt for best result.
  • 1 tbsp honey Adjust sweetness to taste.
  • 1 tsp vanilla extract
For the Coating
  • 1 cup semi-sweet chocolate chips Can substitute with dark chocolate.
  • 2 tbsp coconut oil Can substitute with vegetable oil or butter.

Method

Preparation
  1. In a large bowl, add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Combine thoroughly until well mixed.
  2. Scoop out portions of the yogurt mixture (about 2 tbsp each) and place them on a parchment paper-lined baking sheet or large plate. You should be able to make about 10 clusters.
  3. Place the baking sheet with the yogurt clusters in the freezer and freeze until they are completely solid, which usually takes about 1-2 hours.
Coating
  1. Once the clusters are frozen, melt the chocolate. In a microwave-safe bowl, combine the chocolate chips and coconut oil, microwaving in 15 or 30-second intervals and stirring in between until melted.
  2. Remove the frozen yogurt clusters from the freezer. Carefully dip each cluster into the melted chocolate, using a spoon to ensure that each one is thoroughly coated.
  3. Place each chocolate-coated cluster back on the prepared baking sheet. Optionally, sprinkle with a bit of sea salt for an extra flavor kick.
  4. Return the clusters to the freezer for a few minutes to let the chocolate harden and the yogurt solidify a little.
