- Preheat the oven to 350°F.
- In the bowl of a stand mixer, combine the melted butter and sugars. Beat until well combined using the paddle attachment.
- Add the egg and vanilla to the mixture and beat until well combined.
- Incorporate the flour, cocoa powder, espresso powder, baking soda, and salt into the mixture, stirring until a soft dough forms.
- Gently stir in the chocolate chips and mint M&M candies by hand.
- Use a large cookie scoop to drop 12 balls of dough onto a parchment-lined baking sheet.
- Bake for exactly 10 minutes. The cookies will appear underdone but will continue to set up while cooling.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely before serving.
- Store the cookies in an air-tight container. Enjoy!
Notes
For an extra burst of mint flavor, you can add a few drops of peppermint extract to the dough along with the vanilla extract.
