  • 1 cup water
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder For a richer flavor, consider using dark cocoa.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  • In a large bowl, mix together the mayonnaise, water, and vanilla extract until smooth.
  • In another bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared baking pan and smooth the top.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool before serving.

Notes

This cake can be served plain or with frosting. A dusting of powdered sugar, vanilla ice cream or whipped cream make great additions. Store wrapped in plastic wrap or foil; it lasts up to a week in the fridge.
