Wet Ingredients

  • 1 cup mayonnaise Make sure it's at room temperature.
  • 1 cup water
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour Can be substituted with gluten-free flour blend.
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9 × 13 inch baking pan.
  • In a large bowl, mix together the mayonnaise, water, and vanilla extract until smooth.
  • In another bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared baking pan and smooth the top.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool before serving.

Notes

Serve plain or with a dusting of powdered sugar, whipped cream, or a scoop of vanilla ice cream. You can also frost it with chocolate icing or sprinkle chocolate chips on top. Store leftovers in an airtight container at room temperature for up to three days or refrigerate for up to a week.
