- Heat oven to 350°F. Spray a 9x13 baking dish with non-stick spray.
- To make the chocolate chip cookie bars, add butter, brown sugar, and vanilla to a large bowl. With a hand-held mixer, cream ingredients until lighter and fluffier. Add in eggs, mixing well after.
- Add flour, baking soda, and salt. Mix on low until combined. Stir in chocolate morsels.
- Press half of the cookie dough into the prepared baking dish. Bake for 10 minutes.
- To make the caramel sauce, in a saucepan over medium heat, add evaporated milk and caramel bits. Stir frequently for about 8 minutes, or until caramels are melted and milk is fully incorporated. Remove from heat.
- Remove partially baked cookie bars from the oven. Pour caramel sauce over the bars.
- Place flattened dollops of remaining cookie dough over the hot caramel. Bake for an additional 15-18 minutes or until caramel is bubbling and cookie is golden brown.
- Allow bars to cool to room temperature, then cut and serve.
Notes
These Chocolate Chip Caramel Bars are best enjoyed warm with a scoop of vanilla ice cream. Store any leftovers in an airtight container at room temperature for up to 3 days.
