Ingredients
  

  • 1 cup butter, room temperature
  • cups brown sugar
  • 1 teaspoon vanilla
  • 2 large eggs, room temperature
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semi-sweet chocolate morsels
  • 5 ounces evaporated milk
  • 1 package caramel bits or wrapped caramels

  • 8x12 or 9x13 Baking Dish

Method
 

  1. Heat oven to 350°F. Spray a 9x13 baking dish with non-stick spray.
  2. To make the chocolate chip cookie bars, add butter, brown sugar, and vanilla to a large bowl. With a hand-held mixer, cream ingredients until lighter and fluffier. Add in eggs, mixing well after.
  3. Add flour, baking soda, and salt. Mix on low until combined. Stir in chocolate morsels.
  4. Press half of the cookie dough into the prepared baking dish. Bake for 10 minutes.
  5. To make the caramel sauce, in a saucepan over medium heat, add evaporated milk and caramel bits. Stir frequently for about 8 minutes, or until caramels are melted and milk is fully incorporated. Remove from heat.
  6. Remove partially baked cookie bars from the oven. Pour caramel sauce over the bars.
  7. Place flattened dollops of remaining cookie dough over the hot caramel. Bake for an additional 15-18 minutes or until caramel is bubbling and cookie is golden brown.
  8. Allow bars to cool to room temperature, then cut and serve.

Notes

These Chocolate Chip Caramel Bars are best enjoyed warm with a scoop of vanilla ice cream. Store any leftovers in an airtight container at room temperature for up to 3 days.
