Ingredients
  

For the crust
  • 1 cup Graham cracker crumbs
  • 1/4 cup Sugar
  • 1/2 cup Butter, melted
For the cheesecake filling
  • 2 packages Cream cheese, softened Let sit at room temperature before mixing.
  • 3/4 cup Sugar
  • 2 large Eggs Add one at a time.
  • 1 teaspoon Vanilla extract
  • 1/2 cup Cocoa powder
For the ganache
  • 8 ounces Semisweet chocolate, chopped Use high-quality chocolate for the best flavor.
  • 1 cup Heavy cream Heat until simmering before combining with chocolate.

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a greased baking dish to form your crust.
  3. In another bowl, beat together the cream cheese and sugar until smooth. Add the eggs one at a time, followed by the vanilla extract and cocoa powder, until well incorporated.
  4. Pour the cheesecake filling over the crust and bake for about 30 minutes or until set.
  5. To prepare the ganache, heat the heavy cream until it begins to simmer. Pour it over the chopped chocolate. Let it sit for a minute, then stir until smooth.
  6. Once the cheesecake bars are cool, pour the ganache over the top and spread evenly.

Notes
