Ingredients
  

Main Ingredients
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth Homemade broth recommended for richer flavor.
  • 2 cups mixed vegetables Can include carrots, peas, green beans, corn.
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil For sautéing.
  • 1 leaf bay leaf Remove before serving.

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion turns translucent, about 3-4 minutes.
  3. Add the mixed vegetables and cook for another 5 minutes.
  4. Pour in the chicken broth, add the shredded chicken, thyme, salt, pepper, and the bay leaf.
  5. Raise the heat to bring the soup to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes.
  6. Remove the bay leaf, taste the soup and adjust seasoning as desired. Enjoy hot.

Notes

For added flavors, consider topping with fresh herbs or serving with crusty bread. Can be customized based on available vegetables.
