- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic. Sauté until the onion turns translucent, about 3-4 minutes.
- Add the mixed vegetables and cook for another 5 minutes.
- Pour in the chicken broth, add the shredded chicken, thyme, salt, pepper, and the bay leaf.
- Raise the heat to bring the soup to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes.
- Remove the bay leaf, taste the soup and adjust seasoning as desired. Enjoy hot.
