Main Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth Homemade is recommended for best flavor.
  • 2 cups cooked chicken, shredded
  • 9 ounces cheese tortellini Frozen tortellini can be used.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 2 cups spinach
  • for serving Grated Parmesan cheese Add a generous sprinkle when serving.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery and sauté until softened, about 5 minutes.
  3. Stir in the garlic and cook for another minute.
Cooking
  1. Pour in the chicken broth and bring to a simmer.
  2. Add the cooked chicken, tortellini, Italian seasoning, salt, and pepper.
  3. Cook until the tortellini is tender, about 5-7 minutes.
  4. Stir in the spinach and cook until wilted.
  5. Serve hot, topped with grated Parmesan cheese.
