Ingredients
  

For the filling
  • 8 oz Cream cheese, softened Can substitute with low-fat cream cheese
  • 1/2 cup Sour cream
  • 2 cups Diced cooked chicken Shredded works great too
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded pepper jack cheese
For the assembly and frying
  • 8 pieces Flour tortillas (medium size)
  • Oil for frying Make sure oil is hot before frying

Method
 

Preparation
  1. In a bowl, combine softened cream cheese, sour cream, diced cooked chicken, shredded cheddar, and pepper jack cheese. Mix until smooth.
  2. Take a flour tortilla and spread about 2 tablespoons of the filling in a line down the center.
  3. Roll the tortilla tightly around the filling, tucking in the sides as you roll.
Cooking
  1. Heat oil in a frying pan over medium-high heat. Carefully place the rolled taquitos seam-side down into the oil.
  2. Fry for 2-3 minutes on each side or until golden brown and crispy. Remove them from the oil and place on a paper towel to drain excess oil.
