Ingredients

Steak Preparation
  • 6 medium cube steaks, cut into 1 1/2 inch squares
  • 1 cup buttermilk For marinating
  • 2 large eggs
  • 1 Tbsp hot sauce Optional for flavor
Flour Coating
  • 3 cups flour Divided into two portions
  • 2 tsp Slap Ya Mama® seasoning Or any other seasoning of choice
  • 2 tsp garlic salt
  • 1 tsp pepper
  • 2 tsp onion powder
  • 1 tsp crushed red peppers For added heat
  • 1 Tbsp parsley flakes For garnish and flavor
Frying
  • 1-2 cups vegetable oil For frying

Method

Preparation
  1. Heat vegetable oil in an electric skillet or a large cast-iron pan to 375°F.
  2. Cut cube steaks into 1 1/2 inch squares and place them on a plate lined with paper towels to soak up excess liquid.
  3. Divide the flour; add 1 1/2 cups into a large baggie and the remaining 1 1/2 cups into another baggie with all the spices. Seal and shake to mix well.
  4. In a medium bowl, whisk together the eggs, hot sauce, and buttermilk until well blended.
Frying the Steak Bites
  1. Once the oil is ready, pat the steak bites dry again. Place about 10 steak bites into the flour baggie, seal it, and shake to coat.
  2. Dip the bites into the egg mixture, then back into the seasoned flour baggie before adding them into the hot oil.
  3. Fry the bites until golden brown on both sides, about 3-4 minutes per side.
  4. Once cooked, transfer the steak bites to a plate lined with paper towels and keep warm in a preheated oven at 175°F while completing the rest of the bites.

Notes

For added flavor, marinate steak in buttermilk for several hours or overnight. Use a thermometer to ensure oil is at the right temperature - too hot can cause burning, while too cool will result in greasy bites.
