Method
Prepare the Dough
- Combine flour, baking powder, and salt in a bowl. Create a well in the center and pour in honey and water. Mix for 10-12 minutes until you achieve a smooth consistency.
Knead and Rest
- Incorporate sunflower oil, kneading for another minute. Cover the dough and allow it to rest for 30 minutes.
Cook the Filling
- In a medium frying pan, heat olive oil over medium heat. Sauté chopped yellow onion for 3-4 minutes until softened.
- Add finely chopped chicken thighs along with ras el hanout, turmeric, cayenne, garlic powder, and salt. Cook for 6-7 minutes until the chicken is fully cooked.
- Stir in dried parsley and let the filling cool completely.
Shape the Dough
- Divide the rested dough into 9 pieces (about 85 g each) and shape them into balls.
- Grease your hands with oil, flatten a dough ball on an oiled surface, and let it rest for another 30 minutes.
Stretch the Dough
- Grease your surface again and gently stretch each ball into a thin sheet, about 38 x 33 cm.
- Use a pizza cutter to make small cuts on the edges for easier folding.
Fill and Fold
- Place a slice of cheese on the dough, then add a portion of the chicken mixture.
- Fold the dough from left to right to secure the filling inside.
Cook the Msmen
- Place the filled Msmen on parchment paper. Fry in a pan over medium heat until both sides are golden brown and fully cooked.
