Ingredients
  

Dough Ingredients
  • 500 g flour
  • 7 g salt
  • 12 g honey
  • 275 ml water
  • 6 g baking powder
  • 5 ml sunflower oil
Filling Ingredients
  • 220 g yellow onion, chopped
  • 550 g chicken thighs, finely chopped
  • 5 g ras el hanout
  • 2 g turmeric powder
  • 3 g cayenne powder
  • 3 g garlic powder
  • 4 g salt
  • 1 g dried parsley
  • 10 ml olive oil
  • Cheese slices your choice Cheese slices (your choice)
  • Sunflower oil for frying Sunflower oil for frying

Method
 

Prepare the Dough
  1. Combine flour, baking powder, and salt in a bowl. Create a well in the center and pour in honey and water. Mix for 10-12 minutes until you achieve a smooth consistency.
Knead and Rest
  1. Incorporate sunflower oil, kneading for another minute. Cover the dough and allow it to rest for 30 minutes.
Cook the Filling
  1. In a medium frying pan, heat olive oil over medium heat. Sauté chopped yellow onion for 3-4 minutes until softened.
  2. Add finely chopped chicken thighs along with ras el hanout, turmeric, cayenne, garlic powder, and salt. Cook for 6-7 minutes until the chicken is fully cooked.
  3. Stir in dried parsley and let the filling cool completely.
Shape the Dough
  1. Divide the rested dough into 9 pieces (about 85 g each) and shape them into balls.
  2. Grease your hands with oil, flatten a dough ball on an oiled surface, and let it rest for another 30 minutes.
Stretch the Dough
  1. Grease your surface again and gently stretch each ball into a thin sheet, about 38 x 33 cm.
  2. Use a pizza cutter to make small cuts on the edges for easier folding.
Fill and Fold
  1. Place a slice of cheese on the dough, then add a portion of the chicken mixture.
  2. Fold the dough from left to right to secure the filling inside.
Cook the Msmen
  1. Place the filled Msmen on parchment paper. Fry in a pan over medium heat until both sides are golden brown and fully cooked.
