Ingredients
  

For the Marinade
  • 1/4 cup lime juice
  • 1/4 cup orange juice Note 1 for subs
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Fajitas
  • 700 g skinless chicken thighs or 2 large chicken breasts, halved horizontally Note 2
  • 2 tbsp olive oil
  • 3 pcs capsicums / bell peppers, deseeded and sliced (red, yellow or green)
  • 1 large onion, halved and sliced thickly (brown, yellow, white or red)
  • 8-12 pieces small tortillas
  • 1 large avocado, halved and sliced
  • Sour cream
  • Fresh lime wedges

Method
 

Preparation
  1. Place all Marinade ingredients in a large bowl and mix well.
  2. Add the chicken to the bowl and toss to coat it with the marinade. Let it sit for 1 hour to 24 hours, or freeze immediately and defrost overnight.
Cooking Vegetables
  1. Heat 2 tablespoons of olive oil in a skillet.
  2. Add the sliced bell peppers and onion. Sauté them until they are tender and slightly caramelized.
Cooking Chicken
  1. In another skillet, cook the marinated chicken over medium-high heat until it is cooked through and nicely browned.
Combining Ingredients
  1. Once both the chicken and vegetables are ready, combine them in one skillet for a minute to meld the flavors.

Notes

For extra flavor, marinate the chicken overnight. Use different colors of bell peppers for a vibrant dish. If you love spice, add some sliced jalapeños or chili powder to the marinade. Warm the tortillas before serving to make them soft and pliable.
