Main Ingredients

  • 200 g chicken breast, sliced Slice thinly for even cooking.
  • 200 g egg noodles Cook according to package instructions.
  • 2 cups mixed vegetables (bean sprouts, bell peppers, carrots, etc.) Use fresh vegetables for best flavor.
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 4 tablespoons soy sauce Adjust based on taste for saltiness.
  • 2 tablespoons oyster sauce Can be substituted with vegetable broth for a vegetarian version.
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • to taste none salt and pepper
  • to taste none green onions, chopped (for garnish) Add extra for a fresh touch.

Preparation

  • Cook the egg noodles according to package instructions, drain and set aside.
  • In a pan, heat vegetable oil over medium-high heat. Add sliced chicken, garlic, salt, and pepper; cook until the chicken is no longer pink.
  • Add the mixed vegetables to the pan and stir-fry for 3-4 minutes.
  • In a small bowl, mix soy sauce, oyster sauce, cornstarch, and water. Pour over the chicken and vegetables, stirring well to coat.
  • Add the cooked noodles to the pan, tossing everything together until heated through.
  • Serve hot, garnished with chopped green onions.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on low heat in a pan. It's not recommended to freeze Chicken Chow Mein as the noodles may become mushy when thawed.
