  2. Shred the chicken directly in the crockpot, mixing it with the salsa, beans, and corn for maximum flavor.

  1. In a separate bowl, combine chopped cilantro and lime juice to make a refreshing dressing.
  2. Serve the chicken mixture over rice or quinoa for a wholesome base, top with diced avocado, and drizzle generously with the cilantro lime dressing.
