  • 2 cups cooked chicken, shredded Use rotisserie chicken for quicker preparation.
  • 2 cups broccoli florets, steamed Fresh broccoli can be used; blanch briefly for best texture.
  • 1 cup cooked rice Brown rice can be used for a healthier version.
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper To taste
  • 1/2 cup breadcrumbs Optional for topping.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the cooked chicken, steamed broccoli, cooked rice, cream of chicken soup, cheddar cheese, milk, garlic powder, salt, and pepper. Mix until well combined.
  • Transfer the mixture to a greased casserole dish.
  • If using breadcrumbs, sprinkle them evenly over the top.

Cooking

  • Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and the top is golden brown.
  • Let cool for a few minutes before serving.

Notes

This casserole can be served warm, straight from the oven. Pair it with a side salad or crusty bread for a complete meal. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for 2-3 months. Thaw overnight in the fridge before reheating.
