- Heat the olive oil in a large skillet over medium-high heat.
- Add the sliced chicken breasts. Cook until browned and no longer pink in the center, roughly 5-7 minutes, then remove them from the skillet and set aside.
- In the same skillet, sauté the minced garlic for 30 seconds until fragrant.
- Add sliced mushrooms, bell pepper, and broccoli florets. Stir-fry until they are tender, about 4-5 minutes.
- Return the chicken to the skillet and drizzle in the soy sauce. Stir to combine.
- Cook for another 2-3 minutes to heat everything through, then season with salt and pepper to taste.
- Serve hot, garnished with sesame seeds if desired.
