Filling Ingredients
  • 2 cups cooked, shredded chicken Using rotisserie chicken is a great time-saver.
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese Feel free to customize the cheese.
  • 1 cup shredded mozzarella cheese
  • 1/3 cup ranch dressing Store-bought ranch dressing works well.
Tortilla Ingredients
  • 4 large flour tortillas
  • 2 tablespoons butter or oil For frying the tortillas.
  • 2 tablespoons chopped fresh parsley Optional, for garnish.

Method
 

Preparation
  1. In a bowl, mix the chicken, bacon, cheddar, mozzarella, and ranch dressing until well combined.
  2. Heat a large skillet over medium heat and brush it with butter or oil.
Cooking
  1. Place a tortilla in the skillet and spread 1/4 of the chicken mixture evenly over half of the tortilla.
  2. Fold the other half over to cover the filling.
  3. Cook for 2–3 minutes per side, until golden brown and the cheese is melted.
  4. Repeat with the remaining tortillas and filling.
  5. Slice the quesadillas into wedges, garnish with parsley if desired, and serve warm.
