  • 32 oz frozen tater tots
  • 2 cups sharp cheddar cheese, shredded
  • 1 packet ranch seasoning mix
  • 1 can cream of chicken soup
  • 16 oz sour cream
  • 1 pound bacon, cooked and crumbled Save 2 tablespoons for garnish.
  • 1 pound cooked chicken, chopped or shredded Rotisserie chicken can be used as a shortcut.
  • 2 tablespoons green onions, sliced
  • 2 tablespoons reserved crumbled bacon For garnish.

Preparation

  • Preheat your oven to 400°F and set aside 2 tablespoons of crumbled bacon for later.
  • In a large bowl, combine cooked chicken, most of the crumbled bacon, sour cream, cream of chicken soup, ranch seasoning mix, and shredded cheddar cheese. Mix until well combined.
  • Pour the mixture into a greased 9×13-inch baking dish and spread it evenly.
  • Top with a single layer of frozen tater tots.

Baking

  • Bake in the oven for about 40 minutes, or until the tater tots are golden brown and the casserole is bubbling.
  • Once done, sprinkle with the reserved bacon crumbles and fresh green onions.

Serving

  • Serve hot from the oven, optionally with a side salad or steamed vegetables.

Notes

Store leftovers covered in the refrigerator for up to 3 days, or freeze for up to 2 months. Thaw in the fridge before reheating. Consider using Greek yogurt instead of sour cream for a lighter version and turkey bacon instead of regular bacon.
