Chicken and Spinach in Creamy Mushroom Sauce

Ingredients
- - 2 tbsp olive oil
- - 4 chicken thighs skinless and boneless, sliced
- - 10 oz mushrooms sliced
- - 4 tbsp butter
- - 4 cloves garlic minced
- - 1 tbsp all-purpose flour
- - 1 cup half and half
- - ½ cup chicken broth
- - ½ cup parmesan cheese grated
- - 1 cup fresh spinach
- - Salt to taste
- - Freshly ground pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken thighs and cook for a few minutes on each side until nicely browned. Season with salt and pepper to taste. Remove the browned chicken thighs from the skillet and set them aside. Do not turn off the heat.
- In the same skillet, add the sliced mushrooms and cook for a few minutes until lightly browned. Season with salt and pepper to taste. Stir to combine, then remove the mushrooms from the skillet and set them aside. Do not turn off the heat.
- In the same skillet, melt the butter. Add the minced garlic and cook for 1 minute until fragrant. Add the all-purpose flour and stir until combined.
- Gradually add the half and half, chicken broth, and grated parmesan cheese to the skillet, stirring continuously until well combined. Season with salt and pepper to taste. Stir until the sauce thickens.
- Add the fresh spinach to the skillet and cook until wilted.
- Return the browned chicken thigh slices and sliced mushrooms to the skillet. Mix everything together and cook until warmed through.
- Serve the chicken and spinach in creamy mushroom sauce hot and enjoy!
