Ingredients
  

For the Chicken Marinade
  • 1 lb boneless skinless chicken breast (or thigh) Choose chicken breast or thigh as per preference.
  • 1 tablespoon Shaoxing wine (or dry sherry) Shaoxing wine can be substituted with dry sherry.
  • 1/2 teaspoon salt
  • 1 teaspoon cornstarch For marinating.
For the Sauce
  • 3 tablespoons oyster sauce
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 1/2 tablespoon dark soy sauce (or soy sauce)
  • 1/4 cup chicken stock
  • 1 tablespoon sugar Adjust according to taste.
  • 1 tablespoon cornstarch For thickening the sauce.
  • 1/4 teaspoon salt
For the Vegetables
  • 1 head broccoli, chopped into bite-sized florets
  • 2 tablespoons peanut oil (or vegetable oil) For cooking.
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, minced

Method
 

Preparation
  1. Slice the chicken against the grain into thin, bite-sized pieces, about 1/4 inch thick.
  2. Place the sliced chicken in a medium bowl, add the marinade ingredients, mix well, and let it sit for 10 minutes.
  3. In another bowl, combine all the sauce ingredients and stir until mixed. Set this aside.
Cooking
  1. Bring 1/3 cup of water to a boil in a large nonstick skillet over medium-high heat.
  2. Add the broccoli, cover, and steam for 40 to 50 seconds. Transfer the broccoli to a plate and wipe excess water from the skillet.
  3. Add the oil to the skillet, swirling to coat. Spread the marinated chicken in a single layer.
  4. Cook undisturbed for about 30 seconds until the bottom is browned, flip to sear the other side briefly.
  5. Add the garlic and ginger, stirring briefly to release their fragrance.
  6. Return the broccoli to the skillet, re-stir the sauce to dissolve the cornstarch, then pour it over the chicken and broccoli.
  7. Cook and stir for about 1 minute until the sauce thickens.
  8. Transfer everything to a plate immediately and serve hot with steamed rice or boiled noodles.

Notes
