Preparation
- Preheat the oven to 350°F. Grease a 9×5-inch loaf pan with nonstick spray and line with parchment if desired.
- In a large mixing bowl, whisk together sugar, milk, oil, egg, vanilla extract, and almond extract until smooth.
- In a separate bowl, mix flour, baking powder, and salt.
- Add dry ingredients to the wet ingredients and fold until just combined. Do not overmix.
- Toss halved maraschino cherries in a tablespoon of flour and gently fold into the batter.
- Pour batter into the prepared loaf pan and smooth the top.
Baking
- Bake at 350°F for about 60–70 minutes. Check doneness at 55 minutes with a toothpick.
- If the top browns too quickly, tent loosely with foil for the last 15-20 minutes.
- Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool before glazing.
Glazing
- In a small bowl, whisk powdered sugar, almond extract, vanilla extract, melted butter and maraschino cherry juice until smooth.
- Drizzle glaze over the warm loaf and let it set.

Notes
