Baking the Cake
- Preheat your oven to 350°F.
- Prepare your loaf pan by spraying it with non-stick cooking spray and setting it aside.
- In a large bowl, whisk together the sugar, whole milk, oil, egg, vanilla extract, and almond extract until smooth.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
- Fold in the cherries, being careful not to overmix the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the oven for about 60 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan for about 10 minutes, then transfer it to a wire rack.
Preparing the Glaze
- In a bowl, whisk together the powdered sugar, almond extract, vanilla extract, melted butter, and cherry juice until smooth.
- Drizzle the glaze over the cooled loaf cake, allowing it to drip down the sides.
