Ingredients
  

For the cake
  • 3/4 C sugar
  • 1/2 C whole milk
  • 1/2 C oil (vegetable or canola)
  • 1 piece egg
  • 1 tsp pure vanilla extract
  • 1 tsp almond extract
  • 2 C flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 C maraschino cherries (cut in half)
For the glaze
  • 1 C powdered sugar
  • 1 tsp almond extract
  • 1 tsp pure vanilla extract
  • 2 tbsp melted unsalted sweet cream butter
  • 1/3 C maraschino cherry juice

Method
 

Baking the Cake
  1. Preheat your oven to 350°F.
  2. Prepare your loaf pan by spraying it with non-stick cooking spray and setting it aside.
  3. In a large bowl, whisk together the sugar, whole milk, oil, egg, vanilla extract, and almond extract until smooth.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  5. Fold in the cherries, being careful not to overmix the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the oven for about 60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan for about 10 minutes, then transfer it to a wire rack.
Preparing the Glaze
  1. In a bowl, whisk together the powdered sugar, almond extract, vanilla extract, melted butter, and cherry juice until smooth.
  2. Drizzle the glaze over the cooled loaf cake, allowing it to drip down the sides.
