  • 4 cups zucchini, chopped
  • 2 cups bread cubes (day-old or toasted)
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • to taste Salt and pepper
  • 1 tbsp butter (optional, for topping)

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and grease a 9x13" casserole dish.
  2. In a bowl, combine zucchini, sour cream, egg, Parmesan, garlic powder, onion powder, salt, and pepper.
  3. Fold in bread cubes and 1 1/2 cups cheddar cheese until evenly coated.
  4. Pour the mixture into the casserole dish.
  5. Sprinkle the remaining cheddar cheese and butter on top.
Baking
  1. Bake uncovered for 30–35 minutes until the top is golden and bubbly.
  2. Serve warm and enjoy!
