  • 4 cups zucchini, chopped
  • 2 cups bread cubes (day-old or toasted)
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • to taste Salt and pepper
  • 1 tbsp butter (optional, for topping)

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and grease a 9x13" casserole dish.
  • In a bowl, combine zucchini, sour cream, egg, Parmesan, garlic powder, onion powder, salt, and pepper.
  • Fold in bread cubes and 1 1/2 cups cheddar cheese until evenly coated.
  • Pour the mixture into the casserole dish.
  • Sprinkle the remaining cheddar cheese and butter on top.

Baking

  • Bake uncovered for 30–35 minutes until the top is golden and bubbly.
  • Serve warm and enjoy!

Notes

For extra flavor, consider adding cooked bacon or sausage to the mixture. You can switch the cheeses; mozzarella or pepper jack offers distinct flavors. Ensure the zucchini is well-drained to avoid a soggy casserole. For a crispy topping, mix crushed crackers or breadcrumbs with butter before baking.
