Preparation
- Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- Dice the onion and mince the garlic. Shred the cheese if not pre-shredded.
Cooking
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up, until it’s no longer pink (about 6–8 minutes). Drain excess fat if necessary.
- Add the diced onion to the skillet and sauté 3–4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant. Season with salt and pepper.
- Reduce heat to low. Stir in the cream of mushroom soup, sour cream, milk, and 1 cup of the shredded cheddar. Mix until smooth and heated through. Taste and adjust seasoning.
- Spread the beef mixture evenly into the prepared baking dish. Arrange frozen tater tots in a single layer on top, covering the filling. Sprinkle the remaining 1 cup of cheddar over the tots if you like extra cheesiness.
- Bake uncovered for 30–35 minutes, until the filling bubbles and the tater tots are hot through. If the tots need more color, broil for 2–3 minutes — watch closely to avoid burning.
Serving
- Remove from oven and let rest for 5 minutes; this helps the filling set so it slices cleanly.
- Garnish with diced red bell peppers and chopped chives. Serve hot.

Notes
For a spicier twist, stir in a teaspoon of smoked paprika or a few dashes of hot sauce when seasoning the beef. For lower sodium, choose low-sodium condensed soup and adjust salt later.
