  • 2 lbs Yukon gold potatoes, thinly sliced
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk Can substitute with plant-based milk
  • 1/2 cup heavy cream Skip for a lighter version
Seasoning and Cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1.5 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Gruyère cheese Optional for extra richness
  • to taste Fresh thyme sprigs For garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.
  2. Melt the butter in a medium saucepan over medium heat; add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Whisk in the flour to combine and cook for 1 minute.
  4. Gradually add the milk and cream, stirring gently, and let it simmer for 3–5 minutes until the sauce thickens.
  5. Mix in the salt, black pepper, cheddar, and Gruyère cheese until melted and smooth; remove from heat.
Layer and Bake
  1. Place half of the sliced potatoes in the greased baking dish and pour half of the cheese sauce over them.
  2. Repeat with the remaining potatoes and cheese sauce.
  3. Cover the dish with foil and bake for 40 minutes; then remove the foil and bake for an additional 20–25 minutes until golden and bubbly.
  4. Let the dish rest for 10 minutes before serving, garnished with fresh thyme.

Notes
