Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.
- Melt the butter in a medium saucepan over medium heat; add the minced garlic and sauté for about 30 seconds until fragrant.
- Whisk in the flour to combine and cook for 1 minute.
- Gradually add the milk and cream, stirring gently, and let it simmer for 3–5 minutes until the sauce thickens.
- Mix in the salt, black pepper, cheddar, and Gruyère cheese until melted and smooth; remove from heat.
Layer and Bake
- Place half of the sliced potatoes in the greased baking dish and pour half of the cheese sauce over them.
- Repeat with the remaining potatoes and cheese sauce.
- Cover the dish with foil and bake for 40 minutes; then remove the foil and bake for an additional 20–25 minutes until golden and bubbly.
- Let the dish rest for 10 minutes before serving, garnished with fresh thyme.
Notes
For a crunchy top, consider adding breadcrumbs before the final bake. You can also customize the cheese or incorporate additional vegetables such as onions or mushrooms.
