Equipment

  • Large mixing bowl
  • Pastry cutter or forks for cutting in butter
  • Baking sheet

Ingredients

  • 2 cups all-purpose flour
  • 1 1/4 cups cheddar cheese divided
  • 1 tablespoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup 4 tablespoons cold butter, cubed
  • 1 cup + 1 tablespoon buttermilk

Instructions

  • Preheat oven to 450˚F. In a large bowl, whisk together flour, 1 cup of cheddar cheese, dried rosemary, garlic powder, baking powder, sugar, salt, and black pepper.
  • Using a pastry cutter or 2 forks, cut cold butter into the dry ingredients until a crumbly mixture forms.
  • Gently fold in buttermilk with a rubber spatula until the dough just barely holds together.
  • Drop dough by 1/4 cupfuls onto a greased or lined baking sheet.
  • Top each biscuit with the remaining cheddar cheese.
  • Bake for 12-15 minutes or until the biscuits are golden brown on top.

Notes

Don't overmix the dough; it should be just combined to avoid tough biscuits.
These biscuits are best served warm. Store leftovers in an airtight container and reheat before serving.
