Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes thoroughly and cut them in half or quarters for even cooking.
  3. Slice the smoked sausage into 1/4-inch rounds.
  4. In a small bowl, combine the ranch seasoning, garlic powder, onion powder, and black pepper.
  5. Toss the halved potatoes in a large mixing bowl with olive oil and half of the ranch seasoning mix until well coated.
  6. Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
Cooking
  1. Spread the seasoned potatoes in a single layer on the baking sheet; avoid overcrowding for the crispiest texture.
  2. Scatter the sliced smoked sausage evenly over the potatoes.
  3. Roast in the oven for 35-40 minutes, stirring halfway through, until the potatoes turn golden and tender.
  4. Once golden, sprinkle the shredded cheese on top and return to the oven for an additional 5 minutes, allowing the cheese to bubble and melt.
  5. Garnish with fresh parsley for a delightful finishing touch. Serve while hot, with a dollop of sour cream if desired.
