  2. In a large skillet, brown the ground beef over medium heat until fully cooked. Make sure to break it apart for even cooking.
  3. Add in the diced onion and minced garlic. Sauté until the onion turns translucent, about 3-5 minutes.
  4. Stir in the uncooked rice, beef broth, and mixed vegetables if you’re using them. Season with salt and pepper.
  5. Allow the mixture to come to a gentle simmer for a minute, then remove it from heat.
  6. Transfer the mixture into a greased casserole dish, spreading it out evenly.
  7. Generously sprinkle shredded cheese over the top.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes.
  9. Remove the foil and continue baking for an additional 10 minutes or until the cheese is bubbly and golden.
  10. Let it cool slightly before serving.

Notes

For a lighter alternative, swap the beef for ground turkey or chicken, and feel free to use brown rice for a healthier twist. Leftovers can be stored in an airtight container for up to 3-4 days in the fridge or wrapped tightly and frozen for up to 3 months.
