  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 cup rice (white or brown) Rinsing the rice can help remove excess starch.
  • 1 medium onion, chopped
  • 1 cup mushrooms, sliced
  • 2 teaspoons Italian seasoning
  • 1 cup mozzarella cheese, shredded Feel free to substitute with other cheese types.
  • 1/2 cup Parmesan cheese, grated
  • to taste salt and pepper
  • 2 cups beef broth or water You can substitute with any broth you have on hand.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In an ovenproof skillet, brown the ground beef over medium heat.
  3. Add the chopped onion and sliced mushrooms, cooking until softened.
  4. Stir in the rice, Italian seasoning, salt, and pepper.
  5. Pour in the beef broth or water and bring the mixture to a boil.
  6. Reduce the heat, cover, and let it simmer for about 20 minutes, or until the rice is tender.
  7. Remove from heat and sprinkle the mozzarella and Parmesan cheese on top.
  8. Transfer the skillet to the oven and bake until the cheese is bubbly and golden, about 10-15 minutes.
  9. Serve the casserole hot and enjoy!
