- In another pot, fry up your French fries until they are crispy and golden brown.
- In a saucepan, combine the shredded cheddar and Monterey Jack cheeses with a splash of milk. Melt over medium-low heat, stirring frequently until it’s thick and creamy.
Assembly
- On a large flour tortilla, place a layer of the cooked beef, a handful of fries, and drizzle the cheese sauce.
- Add your favorite toppings, roll it all up tightly, and then toast in a skillet until golden brown.
