Ingredients
  

For the Filling
  • 1 lb ground beef or thinly sliced steak Can substitute with ground turkey or pulled pork.
  • 1 packet taco seasoning Store-bought or homemade.
  • 2 cups frozen French fries Crispy fries work best.
  • 1 cup shredded cheddar cheese For the cheese sauce.
  • 1 cup shredded Monterey Jack cheese For the cheese sauce.
  • 1/2 cup milk To help melt the cheese.
  • 4 large flour tortillas Use a larger size for easy wrapping.
Optional Toppings
  • to taste sour cream
  • to taste hot sauce
  • to taste guacamole
  • to taste pico de gallo

Method
 

Preparation
  1. Heat a skillet over medium heat. Add the ground beef (or steak) and break it up as it cooks.
  2. Incorporate the taco seasoning and cook for about ten minutes until the meat is browned and fully cooked.
  3. In another pot, fry up your French fries until they are crispy and golden brown.
  4. In a saucepan, combine the shredded cheddar and Monterey Jack cheeses with a splash of milk. Melt over medium-low heat, stirring frequently until it’s thick and creamy.
Assembly
  1. On a large flour tortilla, place a layer of the cooked beef, a handful of fries, and drizzle the cheese sauce.
  2. Add your favorite toppings, roll it all up tightly, and then toast in a skillet until golden brown.

Notes

If you have leftovers, store them in airtight containers in the fridge for up to three days. To reheat, microwave for a minute or two, or crisp them up in a skillet. Freeze prepared burritos tightly in foil for up to two months.
