  • 2 cups chicken broth
  • 1 cup jasmine rice
  • 1/3 cup liquid (water, broth, or milk; milk preferred) For a creamier texture
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups chopped broccoli
  • 1 cup shredded cheddar cheese

Method
 

Preparation
  1. Heat the olive oil in a medium-sized saucepan over medium heat.
  2. Add the chopped onion and minced garlic, sauté for about 2 minutes, stirring occasionally.
  3. Pour in the chicken broth and bring it to a boil.
  4. Add the jasmine rice, cover it, and reduce the temperature to low. Allow the rice to simmer for about 12 minutes.
  5. Remove the lid and stir well. Incorporate the butter, 1/3 cup of liquid, salt, and pepper.
  6. Cover again and let it simmer for an additional 3 minutes.
  7. Stir in the chopped broccoli and continue cooking on low for 4-5 minutes until desired tenderness is reached.
  8. Stir in the cheddar cheese until melted and creamy.
