Preparation
- Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top.
- Mix brown sugar and cayenne in a shallow bowl and taste the mix to adjust heat.
- Press each bacon strip into the sugar mixture, coating both sides.
Baking the Bacon
- Arrange coated bacon on the wire rack in a single layer. Bake for 15–25 minutes depending on thickness.
- Remove bacon when it’s glossy and crisp. Transfer to parchment-lined tray to cool slightly.
Preparing the Brie
- Reduce oven to 350°F (175°C). Place the Brie wheel on a small baking sheet.
- Top with the candied bacon pieces and bake for 8–12 minutes until the Brie is soft.
Serving
- Serve immediately with crackers, toasted baguette slices, and fruit for best texture.

Notes
