Preparation
- Wash and peel the carrots. Roughly chop and add to food processor to shred.
- Set the shredded carrots aside in a large mixing bowl.
- Halve the dates and remove the pits. Place dates in the food processor with pecans, walnuts, cinnamon, ginger, and sea salt. Process until nuts are finely chopped.
- Add processed ingredients into the mixing bowl with shredded carrots.
- Add rolled oats and chia seeds to the mixing bowl. Mix all ingredients together with a large spoon. If the mixture is too dry, add a few tablespoons of water.
Formation
- Grab about a tablespoon of the mixture and roll into balls, roughly the size of ping-pong balls.
- If desired, roll the balls in shredded coconut.
- Place the energy bites onto a baking sheet, leaving space between them, and freeze for at least 30 minutes to firm up.
Serving
- Serve with a dollop of plain Greek yogurt or creamy peanut butter if desired.

Notes
