Ingredients
  

Main ingredients

  • 1 cup raw carrots, shredded Wash and peel 1-2 carrots depending on size.
  • 10 pieces medjool dates Halve and pit them before use.
  • 1/2 cup raw pecans
  • 1/2 cup raw walnuts
  • 1/2 cup rolled oats
  • 2 tbsp chia seeds
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 pinch sea salt

Optional ingredients

  • to taste shredded coconut to cover Optional for rolling.
  • to taste plain Greek yogurt, creamy peanut butter Optional for serving.

Instructions
 

Preparation

  • Wash and peel the carrots. Roughly chop and add to food processor to shred.
  • Set the shredded carrots aside in a large mixing bowl.
  • Halve the dates and remove the pits. Place dates in the food processor with pecans, walnuts, cinnamon, ginger, and sea salt. Process until nuts are finely chopped.
  • Add processed ingredients into the mixing bowl with shredded carrots.
  • Add rolled oats and chia seeds to the mixing bowl. Mix all ingredients together with a large spoon. If the mixture is too dry, add a few tablespoons of water.

Formation

  • Grab about a tablespoon of the mixture and roll into balls, roughly the size of ping-pong balls.
  • If desired, roll the balls in shredded coconut.
  • Place the energy bites onto a baking sheet, leaving space between them, and freeze for at least 30 minutes to firm up.

Serving

  • Serve with a dollop of plain Greek yogurt or creamy peanut butter if desired.

Notes

To keep bites fresh, store in an airtight container in the fridge for up to one week or freeze for up to three months. Ensure they're sealed to avoid freezer burn.
