Ingredients
  

Main Ingredients
  • 2 pieces ripe bananas, mashed (about 1 cup) Make sure they are very ripe for maximum sweetness.
  • 1 cup grated carrots
  • 2 large eggs Can substitute with applesauce or flax eggs for vegan option.
  • 1/3 cup vegetable oil or melted coconut oil
  • 1/2 cup brown sugar
  • 1/4 cup milk of choice
  • 1 1/2 cups all-purpose flour Can replace half with whole wheat flour for added fiber.
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • pinch salt
  • 1/2 cup chopped walnuts or pecans (optional) Can substitute with chocolate chips for a sweet twist.
Optional Cream Cheese Glaze
  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, mashed bananas, vegetable oil, brown sugar, and milk until smooth.
  3. Stir in the grated carrots until fully combined.
  4. In another bowl, mix the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Baking
  1. Gradually add the dry mixture to the wet mixture, stirring gently until just combined. If using nuts, fold them in.
  2. Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Glazing (optional)
  1. For the optional glaze, beat together cream cheese, softened butter, powdered sugar, and vanilla until smooth. Spread over the cooled bread.
