Preparation
- Preheat your oven to 350°F (175°C) and grease and line a 9×5-inch loaf pan with parchment paper.
- In a large mixing bowl, whisk together the eggs, mashed bananas, vegetable oil, brown sugar, and milk until smooth.
- Stir in the grated carrots until fully combined.
- In another bowl, mix the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Baking
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined. If using nuts, fold them in.
- Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Glazing (optional)
- For the optional glaze, beat together cream cheese, softened butter, powdered sugar, and vanilla until smooth. Spread over the cooled bread.
