Ingredients
  

Wet Ingredients
  • 1 cup applesauce
  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 3 large eggs
  • 1/2 cup vegetable oil Can substitute with coconut oil for different flavor
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Can use whole wheat flour for added nutrition
  • 1 cup sugar Can reduce according to taste or use sugar substitutes
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon Add nutmeg or ginger for more flavor
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the grated carrots, zucchini, and applesauce.
  3. In a separate bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, and salt.
  4. In another bowl, beat the eggs, then add the vegetable oil and vanilla extract.
  5. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  6. Gently fold in the carrot, zucchini, and applesauce mixture.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before slicing.
