Ingredients
  

For the tartlets
  • 1 sheet all-butter puff pastry, thawed and cut into 6 squares Make sure the pastry is fully thawed for best results.
  • 2 large shallots, peeled and sliced into rings For a more intense flavor, caramelize in butter before adding.
  • 100 g feta cheese, crumbled Can be substituted with goat cheese if preferred.
  • Olive oil or butter for greasing Use for greasing the muffin tin.
  • Fresh thyme leaves Optional garnish.
For the honey mix
  • 4 tbsp honey Warmed with chili and vinegar.
  • 1/2 tsp chili flakes Adjust amount to taste.
  • 1 tsp apple cider vinegar or lemon juice Adds acidity to balance the sweetness.

Method
 

Preparation
  1. Preheat the oven to 200°C (390°F). Lightly grease a 6-cup muffin tin with olive oil or butter.
  2. In a small saucepan, warm the honey with chili flakes and vinegar until just bubbling.
Assembly
  1. Remove from heat and spoon about 1 tsp of hot honey into the bottom of each muffin cup.
  2. Add 2-3 rings of shallot on top of the honey and sprinkle with crumbled feta.
  3. Place a square of puff pastry over each cup, tucking in the edges slightly and cutting a small slit to release steam.
Baking
  1. Bake for 18-22 minutes or until the pastry is golden and crisp.
  2. Let the tartlets cool for 3-5 minutes, then invert the tin onto a serving board to reveal the tartlets.
  3. Drizzle with extra hot honey and garnish with thyme if desired.

Notes
