Preparation
- Preheat the oven to 200°C (390°F). Lightly grease a 6-cup muffin tin with olive oil or butter.
- In a small saucepan, warm the honey with chili flakes and vinegar until just bubbling.
Assembly
- Remove the saucepan from heat and spoon about 1 tsp of hot honey into the bottom of each muffin cup.
- Add 2-3 rings of shallot on top of the honey and sprinkle with crumbled feta.
- Place a square of puff pastry over each cup, tucking in the edges slightly and cutting a small slit to release steam.
Baking
- Bake for 18-22 minutes or until the pastry is golden and crisp.
- Let the tartlets cool for 3-5 minutes, then invert the tin onto a serving board to reveal the tartlets.
- Drizzle with extra hot honey and garnish with thyme if desired.

Notes
These tartlets are best served warm and can be served with a fresh salad or alongside a selection of dips. Drizzling more spicy honey on top before serving enhances the flavor. If you have leftovers, let them cool completely before storing in an airtight container in the fridge for up to 2 days. To reheat, place back in the oven for a few minutes until warm and crisp again.
