Ingredients
  

Main Ingredients
  • 1 cup butter, softened Make sure butter is at room temperature for easier mixing.
  • 1 cup granulated sugar
  • 1 cup light brown sugar Lightly packed.
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 3 cups old-fashioned rolled oats Quick oats can be used but will change the texture.
  • 10 ounces caramel chips One package.
  • 1 cup pecans, roughly chopped Walnuts can be substituted if preferred.

Method
 

Preparation
  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper or a baking mat.
  2. Using a stand or electric mixer, beat together the butter and sugars until creamy.
  3. Add in the eggs and vanilla, and mix until combined.
  4. Add in the flour, baking powder, baking soda, cinnamon, and salt, and mix until combined.
  5. Fold in the caramel chips and chopped pecans.
  6. Using a spoon or cookie scoop, drop 1 1/2 to 2-inch balls onto the baking sheet. Gently flatten them just a bit with your fingers.
Baking
  1. Bake for 10-12 minutes; the centers will look undercooked. Let cool for 5 minutes before serving.

Notes
