Preparation
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper or a baking mat.
- Using a stand or electric mixer, beat together the butter and sugars until creamy.
- Add in the eggs and vanilla, and mix until combined.
- Add in the flour, baking powder, baking soda, cinnamon, and salt, and mix until combined.
- Fold in the caramel chips and chopped pecans.
- Using a spoon or cookie scoop, drop 1 1/2 to 2-inch balls onto the baking sheet. Gently flatten them just a bit with your fingers.
Baking
- Bake for 10-12 minutes; the centers will look undercooked. Let cool for 5 minutes before serving.

Notes
These cookies are best enjoyed fresh out of the oven while they’re still warm and gooey. Serve plain or with a glass of milk or scoop of vanilla ice cream. Store in an airtight container at room temperature for about a week or freeze for up to three months.
