Ingredients
  

Cookie Base

  • 1 cup butter, softened Ensure it's softened but not melted for best texture.
  • 1 cup granulated sugar
  • 1 cup light brown sugar, lightly packed
  • 2 units eggs
  • 2 teaspoons vanilla
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt

Add-ins

  • 3 cups old-fashioned rolled oats
  • 1 package caramel chips (10 ounces)
  • 1 cup pecans, roughly chopped Can substitute with walnuts or almonds.

Instructions
 

Preparation

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper or a baking mat.
  • In a stand or electric mixer, beat together the butter and sugars until creamy.
  • Add in the eggs and vanilla, mix until combined.
  • Mix in the flour, baking powder, baking soda, cinnamon, and salt until well combined.
  • Fold in the caramel chips and chopped pecans.
  • Using a spoon or cookie scoop, drop 1.5 to 2-inch balls onto the baking sheet and gently flatten them slightly with your fingers.

Baking

  • Bake for 10-12 minutes; the centers will look undercooked.
  • Let cool for 5 minutes before serving.

Notes

These cookies are best enjoyed warm. They pair wonderfully with milk or coffee. Store in an airtight container at room temperature for up to a week, or freeze for about three months.
