Preparation
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper or a baking mat.
- In a stand or electric mixer, beat together the butter and sugars until creamy.
- Add in the eggs and vanilla, mix until combined.
- Mix in the flour, baking powder, baking soda, cinnamon, and salt until well combined.
- Fold in the caramel chips and chopped pecans.
- Using a spoon or cookie scoop, drop 1.5 to 2-inch balls onto the baking sheet and gently flatten them slightly with your fingers.
Baking
- Bake for 10-12 minutes; the centers will look undercooked.
- Let cool for 5 minutes before serving.
