Ingredients
  

For the apple mixture
  • 1 bag 3/4 lb gala apples (peeled, cored, and diced) You can substitute with Fuji or Honeycrisp apples.
  • 4 TBSP butter (for sautéing)
  • 3/4 C brown sugar (packed, for the apple mixture)
  • 1 C water (to cook the apples)
For the custard
  • 5 large eggs
  • 2 1/4 C whole milk
  • 4 TBSP unsalted butter (melted)
  • 2 tsp vanilla
  • 1/2 C brown sugar (packed, for the custard)
  • 1 tsp apple pie spice (for the custard)
  • 1 tsp cinnamon
For the bread
  • 14 oz French bread (stale works best) Stale French bread absorbs the custard better. If fresh, dry slightly in the oven.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt 4 tablespoons of butter over medium heat. Add the diced apples, 3/4 cup of brown sugar, and water. Cook for about 5-7 minutes until the apples are soft. Remove from heat and let cool slightly.
  3. In a casserole or baking dish, evenly spread out the stale French bread. Distribute the cooked apples on top, making sure to get them in between the bread pieces.
Custard Mixing
  1. In a large bowl, whisk together the eggs, whole milk, melted butter, vanilla, 1/2 cup of brown sugar, apple pie spice, and cinnamon until well blended.
  2. Pour the egg mixture over the bread and apple layers. Gently press down the bread to create a semi-even surface.
Baking
  1. Place in the preheated oven and bake for 35-40 minutes. Test for doneness by gently touching the center; it should feel dense and firm.
  2. If it’s still squishy, let it bake for another 10 minutes.
  3. Once done, carefully pour any leftover apple juice over the top of the bread pudding.
  4. Serve warm, preferably with whipped cream or ice cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. It can also be frozen for up to 3 months. Reheat individual portions in the microwave for 20-30 seconds.
