Main Ingredients

  • 1 whole Smoked gammon joint Soaked overnight
  • 2 tins beans Your choice of beans
  • 1 tin chopped tomato
  • 200 grams mushrooms Sliced
  • 2 whole red peppers Chopped
  • 3 cloves garlic Chopped
  • 2 tbsp smoked paprika
  • 1 tbsp mild curry powder

Instructions
 

Preparation

  • Soak the smoked gammon joint overnight.

Cooking

  • Place the soaked gammon joint in a slow cooker and cook on high for 4 hours.
  • After 4 hours, remove the gammon and shred it.
  • In the slow cooker, add the beans, chopped tomatoes, mushrooms, red peppers, chopped garlic, smoked paprika, and mild curry powder.
  • Mix everything well and let it cook for an additional 30 minutes.
  • Serve hot.

Notes

Serve with crusty bread or rice. Garnish with fresh herbs for added flavor. For variations, add more vegetables or spices to suit your taste.
