Main Ingredients
  • 1 joint Smoked gammon joint (soaked the night before) Soak overnight to reduce cooking time and enhance flavor.
  • 2 tins beans Use your choice of beans.
  • 1 tin chopped tomato
  • 200 g Mushrooms Chopped
  • 2 pieces red peppers Chopped
  • 3 cloves garlic (chopped)
  • 2 tbsp smoked paprika
  • 1 tbsp mild curry powder

Method
 

Preparation
  1. Soak the smoked gammon joint the night before.
Cooking
  1. Place the soaked gammon joint in a large pot or slow cooker and add the beans, chopped tomatoes, mushrooms, red peppers, and garlic.
  2. Sprinkle in the smoked paprika and mild curry powder.
  3. Cook on high for 4 hours.
  4. Once cooked, shred the gammon joint and mix it back into the stew before serving.

Notes
