  • 2 large eggs
  • 1/2 cup vegetable or canola oil
  • 1 box (15.25 ounce) yellow cake mix

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix the peanut butter, eggs, and oil until it’s smooth.
  3. Add the cake mix to the bowl and stir until a thick dough forms.
  4. Use a 2-tablespoon scoop to portion the dough and roll it into balls.
  5. Place the dough balls on the baking sheet, about 2 inches apart.
  6. Press each dough ball down with a fork to make a crisscross pattern. If you like, you can roll the dough balls in granulated sugar before flattening them.
Baking
  1. Bake the cookies for 10-12 minutes, or until the edges are set and the centers still look slightly soft.
  2. Let the cookies cool on the baking sheet for a few minutes before moving them to a wire rack.
