Method
 

Preparation
  1. In a large pot, cook the penne pasta according to package instructions; drain and set aside.
  2. In the same pot, add the sliced sausage and cook until browned.
  3. Add the diced onion, bell pepper, and minced garlic; sauté until the vegetables start to soften.
Cooking
  1. Stir in the Cajun seasoning, then add the chicken broth and heavy cream. Bring to a simmer.
  2. Add the cooked pasta to the pot and mix well.
  3. Finally, stir in the shredded cheese until melted and creamy.
  4. Season with salt and pepper to taste.
Serving
  1. Serve hot, garnished with chopped parsley.

Notes

Allow leftovers to cool completely before transferring to an airtight container. Can be stored in the refrigerator for up to 3 days, or frozen for up to 2 months.
