Main ingredients
  • 1 lb chicken breast, diced or turkey for a lighter version
  • 1 tablespoon Cajun seasoning adjust according to spice preference
  • 1 tablespoon olive oil for sautéing
  • 1 onion, chopped base vegetable
  • 2 cloves garlic, minced aromatic
  • 1 bell pepper, chopped adds sweetness
  • 2 carrots, diced for added texture
  • 4 cups chicken broth or vegetable broth for a lighter version
  • 1 cup heavy cream don’t add before freezing
  • to taste Salt and pepper for seasoning
  • for garnish Fresh parsley adds freshness

Method
 

Preparation
  1. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, chopped bell pepper, and diced carrots. Sauté until softened, roughly 5-7 minutes.
  3. Stir in the diced chicken and Cajun seasoning. Cook until the chicken is browned, about 5-8 minutes.
  4. Pour in 4 cups of chicken broth. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes.
  5. Stir in 1 cup of heavy cream and season with salt and pepper to taste.
  6. Allow it to simmer for an additional 5 minutes. Serve hot, garnished with fresh parsley.

Notes
