Preparation
- Heat 1 tablespoon of olive oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, chopped bell pepper, and diced carrots. Sauté until softened, roughly 5-7 minutes.
- Stir in the diced chicken and Cajun seasoning. Cook until the chicken is browned, about 5-8 minutes.
- Pour in 4 cups of chicken broth. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes.
- Stir in 1 cup of heavy cream and season with salt and pepper to taste.
- Allow it to simmer for an additional 5 minutes. Serve hot, garnished with fresh parsley.
