  • 600-700 g 4 salmon fillets, skinless, cut into 2.5 cm / 1" cubes (~600 – 700g / 1.2 – 1.4 lb total)
  • 2 tsp paprika (regular/sweet or smoked)
  • 3/4 tsp cooking salt / kosher salt halve for table salt, +50% for flakes
  • 1 tsp onion powder
  • 1 tsp garlic powder don't substitute with fresh garlic, it will burn
  • 1/4 tsp dried thyme
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper optional for some heat
  • 2 1/2 tsp brown sugar (tightly packed)
  • 2 tbsp olive oil

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, mix the paprika, salt, onion powder, garlic powder, thyme, black pepper, cayenne pepper, and brown sugar.
  3. In another bowl, coat the salmon cubes with olive oil, then sprinkle the spice mixture over them, tossing to ensure they're well covered.
  4. Arrange the salmon bites on a baking sheet lined with parchment paper, making sure they're not crowded.
  5. Bake for about 12-15 minutes or until the salmon is flaky and cooked through.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat them in the oven at 180°C (350°F) for a few minutes to maintain tenderness.
