Ingredients
  

  • 2 tsp. olive oil
  • 1 lb. lean ground beef
  • 1 large yellow onion finely diced
  • 4 garlic cloves minced
  • 2 medium carrots quartered and sliced
  • 2 cups chopped cabbage
  • 4 cups low-sodium beef stock
  • 3 8 oz. cans tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tbsp. light brown sugar
  • 2 tbsp. freshly chopped parsley

Method
 

  1. In a large pot, heat olive oil over medium-high heat. Add ground beef, onions, and garlic. Cook until the meat is no longer pink.
  2. Add carrots, cabbage, beef stock, tomato sauce, white rice, bay leaf, and brown sugar to the pot. Season with salt and pepper to taste.
  3. Simmer for 25 minutes, or until rice is fully cooked.
  4. Remove the bay leaf before serving.
  5. Garnish with fresh parsley and cheese if desired.

Notes

Note: Feel free to customize this soup with your favorite herbs and spices. You can also add a splash of vinegar for a tangy kick.
