  • 1 tbsp olive oil (plus more for drizzling)
  • 2-3 pieces ripe plums, cut in half Choose ripe plums for the best sweetness and flavor.
  • 1/4 cup pistachios, roughly chopped Can substitute with other nuts like almonds or walnuts.
  • Fresh thyme sprigs
  • Balsamic vinegar (optional) Can use maple syrup for a vegan version.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the plum halves on a baking sheet, drizzle with olive oil, and season with salt.
Cooking
  1. Roast in the oven for about 15-20 minutes until the plums are tender and caramelized.
  2. While the plums are roasting, place the burrata on a serving plate.
Assembly
  1. Once the plums are ready, arrange them around the burrata, sprinkle with pistachios and fresh thyme.
  2. Drizzle with additional olive oil and balsamic vinegar if using.
  3. Serve immediately, enjoying the creamy burrata with the warm roasted plums.
