  • 1 ball fresh burrata (125–150g)
  • 1 tbsp olive oil (plus more for drizzling)
  • 2-3 pieces ripe plums, cut in half Choose ripe plums for the best sweetness and flavor.
  • 1/4 cup pistachios, roughly chopped Alternatively, you can experiment with other nuts like almonds or walnuts.
  • to taste Fresh thyme sprigs
  • to taste Balsamic vinegar (optional) For additional sweetness.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the plum halves on a baking sheet, drizzle with olive oil, and season with salt.
  3. Roast in the oven for about 15-20 minutes until the plums are tender and caramelized.
Assembly
  1. While the plums are roasting, prepare the burrata by placing it on a serving plate.
  2. Once the plums are ready, place them around the burrata, sprinkle with pistachios and fresh thyme.
  3. Drizzle with additional olive oil and balsamic vinegar if using.
  4. Serve immediately, enjoying the creamy burrata with the warm roasted plums.
